Roasted Whole Chicken

From Stephanie Taylor’s Kitchen

INGREDIENTS

  • 1 whole chicken, giblets removed

  • Salt & pepper to taste

  • 1-2 lemons, sliced

  • “Poultry Seasoning” to taste (can substitute thyme & oregano)

  • 1/2 cup butter, divided into small pats

  • 1/4 cup apple juice

DIRECTIONS

  1. Preheat oven to 350 degrees F.

  2. Place chicken in roasting pan. (You can make a roasting pan by rolling 3 large pieces foil to lay in large pan to lift the chicken off the bottom of the pan.)

  3. Season the chicken generously inside and out with salt, pepper and poultry seasoning. Place 3 tablespoons butter in the chicken cavity. Add some lemon slices to the chicken cavity. Arrange pats of remaining butter and lemon slices on the chicken’s exterior.

  4. Add apple juice to bottom of the pan.

  5. Bake uncovered 1-1/2 to 2 hours (depending on the size of the chicken), to a minimum internal temperature of 180 degrees F. Remove from heat, and baste with melted butter and drippings. Cover with foil, and allow to rest about 30 minutes before serving.
